pina colada cupcakes

I made these Pina Colada Cupcakes for teacher appreciation week at our school. At the bottom of a moist vanilla cake is caramelized pineapple and it’s topped with coconut-rum buttercream, toasted coconut, pineapple wedge and cherry. It’s pure sunshine on a plate.
